Biscuits recipe will bring a ‘new level of deliciousness’ to Halloween

Halloween is just around the corner and it can be fun to get out the baking equipment and make something homemade and delicious during the spookiest time of year.

These cinnamon sugar biscuits are not only incredibly easy to make but look incredible and are filled with a cinnamon filling to make them resemble an autumn version of the American snack Poptarts.

This fun recipe for created by baker Madison Eberhardt, who has become very popular online due to her beautiful Halloween treats which she posts on her TikTok account @mmatildabakes and website mmatildabakes.

Madison said: “I think everyone loves a good pop tart, but making them homemade is a whole new level of deliciousness. These Halloween pop tarts have a super flakey buttery crust that is stuffed with a sweet cinnamon brown sugar filling.”

She added: “They’re cut into cute Halloween shapes, pumpkins and ghosts. I got my Halloween cookie cutters on Amazon. Decorating the top with coloured icing makes them even sweeter and spooky for the holiday. I recommend everyone to bake this recipe, as it may make you ditch store-made pop tarts for homemade every time!”

How to make cinnamon sugar Halloween pop tarts

Ingredients

For the dough:

  • Three cups flour (360g)
  • One egg
  • One tablespoon of salt
  • 20 tablespoons of cold unsalted butter (280g)
  • 8-10 tablespoons of cold water (118ml-150ml)
  • Two tablespoons of sugar

For the filling:

  • ½ cup of dark brown sugar (100g)
  • Two tablespoons of cinnamon
  • ⅛ tablespoons of vanilla extract (0.5 grams)
  • One tablespoon of flour
  • Two tablespoons of melted unsalted butter

Egg wash:

  • One egg
  • One tablespoon of milk

Icing (optional):

  • One cup of powdered sugar
  • Two tablespoons of milk
  • Coloured food dye (orange for pumpkin, white for ghost biscuits)
  • Sprinkles
  • As an alternative, you can use canned frosting for the icing

Kitchen equipment:

  • Halloween cookie cutters
  • Mixing bowl
  • Another mixing bowl
  • Strainer (or sieve)
  • Baking tray

Instructions

To begin, make the dough. Sift the flour, salt and sugar into a mixing bowl. Once the ingredients are combined add cold butter and egg to the mixture and slowly add cold water while pinching the butter in order to incorporate it into the dough fully.

The less water you use the better as the dough should be slightly flakey and not sticky. Once ready, place the dough in the fridge and let it rest while making the biscuit filling. You should let the dough rest for at least 30 minutes but you can also prepare it up to 24 hours before baking the pop tarts, and let it rest in the fridge overnight.

To make the filling, simply combine all the ingredients (dark brown sugar, cinnamon, vanilla extract, flour, melted butter) into a bowl and stir thoroughly until fully combined. Set it aside once the dough has rested.

Once your dough has rested, roll it out and cut with a Halloween cookie cutter of your choice, although the traditional option is a pumpkin cookie cutter and ghost cookie cutter. You will need two dough shapes to make one biscuit, one which will be the bottom layer and one which will be the top layer.

Next, place your bottom layer of biscuits on a baking tray and spread a spoonful of filling in the centre of the bottom biscuit. Eggwash the edges of both your bottom biscuits to act as glue to hold both biscuits together. Carefully place the top biscuits on top of the bottom biscuits and gently use a fork to pin down the edges.

Glaze the top biscuits with the eggwash and place in the oven. Bake at 180C (350F) for around 20 minutes or until the biscuits are a golden brown colour.

Once your biscuits are ready, take them out of the oven and allow them to cool. In order to decorate them, simply use canned frosting or make your own by combing the icing sugar ingredients in a mixing bowl (powdered sugar, milk and food dye) and stir until fully incorporated.

Carefully spread the icing on the biscuits using a knife once they have cooled down, and then you can decorate using sprinkles.

Your delightfully spooky pop tart biscuits are now ready to serve and enjoy.
